I had just pulled my sourdough focaccia deep dish pizza out of the oven (a delicious, pan-crusted lovechild of Italian tradition and Detroit-style indulgence) and was craving the perfect sip to go with it.
I’d been hearing so much buzz about a new Australian wine called Greasy Fingers that I finally decided to try it. I started with the Sauvignon Blanc – cold, crisp, and ready to prove itself. I figured: if a wine literally made for greasy indulgences couldn’t handle my pizza, nothing could.
To my surprise, the white paired perfectly with the pizza. Its bright acidity cut right through the richness of the dough and cheese like it was designed for that exact moment. It lifted the bite and made everything feel a little more elevated without trying too hard.
But the real moment came later. After dinner, I sank into the couch, reached for a bag of sour cream and onion Lay’s (because let’s be honest, the cravings don’t stop at the crust), and poured myself another glass. The combo? Shockingly perfect. That citrusy tang from the white played so well with the salty, savoury chips – it was like a spontaneous late-night snack turned full-blown pairing moment.
What I loved most was how relaxed the whole experience felt. There was no pressure to “get it right” or stick to classic pairings. I wasn’t hosting a dinner party or serving a seven-course tasting menu. I was just unwinding at home with comfort food and a genuinely great glass of wine – it’s vino without the vanity. And somehow, that felt even better.

Sourdough Focaccia Deep Dish Pizza
(inspired by Detroit-style, perfected at home)
Ingredients
100g active sourdough starter (discard works too)
430g water, room temp
512g flour
10g salt
3 tbsp olive oil (divided)
Flaky sea salt
Directions
- Mix starter, salt, and water in a large bowl. Add flour and stir until combined.
- Rest 30–45 min, then do 1 set of stretch-and-folds. Repeat after 30 min.
- Rub dough with olive oil, cover, and let rise at room temp for 4–18 hrs.
- Once doubled, oil a 9×13″ pan and gently pour dough in. Fold into a rectangle, flip seam-side down.
- Rub top with oil and let rest, uncovered, 4–6 hrs until puffy.
- Preheat oven to 425°F. Dimple and stretch dough to fill pan. Add sauce, dimple again. Top with salt and herbs.
- Bake 18 min (bottom rack), add cheese/toppings, and bake 12–15 min more (middle/top rack).
- Cool 10 min, slice, devour.
