Coconut Chocolate Protein Bars 

Prep Time: 15-20 mins | Total Time: 2 hrs 20mins

Ingredients:

Bars 

🥥 1 1/2 cup almond flour

🥥 1 cup vanilla protein powder

🥥 1/2 cup rice crisps or quinoa crisps

🥥 1 1/2 cups almond butter 

🥥 1/4 cup maple syrup

🥥 1 tsp coconut extract

🥥 Pinch of salt

🥥 2-3 tsp of oat milk (if needed to help bind)

🥥 ¼ cup coconut flakes

Topping

🍫 200 grams semi sweet chocolate chips

🍫 1 tbsp coconut oil

🍫 1-2 tbsps coconut flakes

Directions:

Mix almond flour, protein powder, rice crisps, coconut flakes and salt together in a large bowl. Set aside.

Next, mix together almond butter, maple syrup and coconut extract, then pour into first bowl and mix until combined. If mixture feels a bit dry, add 2-3 tsp of oat milk. (Don’t add too much!) 

Line an 8×8 inch pan with parchment paper.  Add dough to pan, pressing down evenly. Place in freezer while you prepare the chocolate topping. 

Melt chocolate and coconut oil together then pour on top of the bars. Sprinkle with coconut flakes.

Place in the fridge for 2 hours to set. Store bars in an airtight container or individually wrapped in fridge for 3-4 weeks or in the freezer for 4 months. Cut into 12 even bars and enjoy!
